But, there are so many types of sushi recipes that it may present a challenge when choosing from our sushi menu. For this reason, we believe that the key to understanding sushi world is grouping them by the way they are prepared.
The different kinds of Sushi
Basic sushi is a small piece of raw seafood placed on a ball of vinegared rice. The most common ingredients are tuna, squid, and prawns. Cucumber, pickled radish and sweet egg omelet are also served. You will find many kinds of sushi presentations with a variety of ingredients. Here is a guide to help you decide on which delicious pieces to choose.
Chirashizushi: “scattered sushi”. Chirashi is a type of sushi served in a bowl with sushi rice and covered with various toppings called “gu“. Usually, it is finished with 9 toppings. This dish is very popular in Japanese homes because it is simple to make and there is no one set recipe for it making it ideal for using up leftovers. And surprisingly, the most common types of Chirashi consumed in Japan are actually made with other ingredients but fish.
Inarizushi: This is a kind of sushi or rice ball. It consists of a pouch of fried tofu (abura age) filled with sushi rice. Abura-age is tofu skin that is deep-fried, first at 110~120 °C, then at 180~200 °C again, and used in many forms in Japanese cuisine. Just beware that because it’s deep fried, it can be pretty greasy, so it’s often prepared boiled in hot water first.
Nigirizushi: “hand-pressed sushi”, also called “two kinds-sushi”. It’s one of the simplest types of sushi, made of a hand-formed rectangle of sushi rice with a swipe of wasabi on top, finished with a topping or Neta (seafood, such as eel, tuna, salmon, shad, haddock, shrimp or octopus.). Since the fish is served raw and displayed on top, the chefs have to select the highest quality fish. This is to ensure that the sushi is healthy, safe and aesthetically pleasing.
Makizushi: “rolled sushi” is usually wrapped in seaweed (Nori), and sometimes in a thin omelet, soy paper, cucumber, or shsiso (perilla) leaves. Rolled sushi is, perhaps, one of the most popular sushi presentations in the Western world.
Oshizushi: “pressed sushi”. It is also known as hako-sushi which means “box sushi”. The box is traditionally made from wood, but nowadays often made from plastic. The wooden or plastic mold, called oshibako is used to make this form of sushi. The bottom of the oshibako is lined with topping which is covered with sushi rice and then the lid of the mold is pressed down to create a firm, rectangular box. It is then cut into squares or rectangles before serving. You may find a variant to its form called oshizushihako that has half cylindrical shapes cut from the thicker top and bottom parts so that the sushi is pressed into a cylindrical shape.
