Sushi is one of those iconic culinary items that do not fade away against the many other options available in the food universe. Quite on the contrary, Sushi has evolved while keeping the core aspects that make it what it is. A timeless classic, a reminder of simplicity, honor, and tradition.
According to historians, sushi has been around since the eighth century
Back in the day sushi had practical use, it was conceived as a way to preserve fish by covering it in fermented rice. As with many great things, people started eating the rice instead of discarding it and realized they were on to something! Contrary to popular belief the sushi first appeared in Southeast Asia.
During the Edo period, appeared the type of sushi most common to us today. Haya-zushi was assembled so that both rice and fish could be consumed at the same time, and the dish became unique to Japanese culture. It was the first time that rice was not being used for fermentation. Rice was now mixed with vinegar, with fish, vegetables and dried foodstuff added.
In the early 19th century, mobile food stalls run by street vendors became popular. During this period nigiri sushi was introduced, consisting of an oblong mound of rice with a slice of fish draped over it. After the Great Kanto earthquake in 1923, nigiri sushi chefs were displaced from Edo throughout Japan, popularizing the dish throughout the country.
