Types of Japanese teas
Japan was first introduced to tea by the Chinese in the 700s, and tea has been a huge part of Japanese culture ever since. There are many types of tea varieties. Mainly, Japanese green teas are categorized by the age of the leaves: young leaves are called sencha and the more mature larger leaves are called bancha. Types of tea are commonly graded depending on the quality and the parts of the plant used as well as how they are processed. There are three main types of Japanese green tea prepared by infusion: sencha, gyokuro, and bancha.
Sencha “decocted tea” is the traditional and most common steamed green tea of Japan. The name describes the method for preparing the beverage, which is made into the green tea beverage by infusing the processed whole tea leaves in hot water. Contrary to matcha, powdered Japanese green tea, in which case the green tea powder is mixed with hot water and therefore the leaf itself is included in the beverage.
Gyokuro “jade dew” differs from the standard sencha (a classic unshaded green tea) in being grown under the shade rather than the full sun. It is produced in fields that are shaded starting in mid-April. After the buds are picked, they are steamed, dried and kneaded. Gyokuro is the highest grade of Japanese tea available and is characterized by its fine green color, rich aroma, and mellow sweet flavor.
Bancha “coarse tea” is harvested from the second flush of sencha between summer and autumn. For this reason, it’s considered a lower grade green tea. Nevertheless, Bancha leaves have the same chemical components of gyokuro (the highest grade of Japanese tea), but the proportion is a little different. Although all other factors being are equal to bancha it has less caffeine and amino-acids but a higher catechin content than gyokuro.
