Background of the “Fire Bowl”
In Japan, a Hibachi (literally meaning a fire bowl) is considered a traditional heating device, often round or square. It is smaller than the bigger “Grills” that we know today in America, also called Teppanyaki. It is not known for sure when the hibachi appeared in Japan, but some records show it was around by 79–1185 AD (Heian Period). Contrary to what you may think the first Hibachis were made of cypress wood lined with clay. In Japan back in the day, metal was not accessible. In English, however, “hibachi” often refers to small cooking grills typically made of aluminum or cast iron, with the latter generally being of higher quality.
Alternatively, “hibachi-style” is often used in the United States as a term for Japanese teppanyaki cooking, in which gas-heated hotplates are integrated into tables around which many people (often multiple parties) can sit and eat at once. The chef performs the cooking in front of the diners, typically with theatrical flair—such as lighting a volcano-shaped stack of raw onion hoops on fire.
